Meal Plans - July 8 to July 12
July 08, 2018Pinterest = One of the greatest web sites ever. I use it for EVERYTHING. It has gotten to the point where I bypass Google search and go straight to Pinterest. I practically live on Pinterest throughout the school year as it is one of the best resources for teachers. Need a laugh? Pinterest has an entire section dedicated to humor. Feeling crafty? Pinterest has tons of DIY projects to try out. Found a great article but you need to read it later because your toddler is couch surfing? Pin it to read later!
My most favorite thing about Pinterest has to be the recipes - it is practically an online cookbook. Sometimes I get into a cooking/creative rut where I end up fixing the same exact thing over and over again. That being said, I'm pretty sure my husband is going to kick me out of the house if I put turkey burgers on the menu again. Pinterest has also exposed us to foods we have never tried before. Did you know that before the advent of Pinterest I had never eaten butternut squash? Yep... thank you Pinterest!
So, here is what we are eating this week! (Links to the original source are included so you can try it out too!) I like to double up the recipes so I don't have to cook for two days.
1. Clean-Eating Taco Soup - This soup is Ah-mazing! This chunky soup contains tons of vegetables that even my kids will eat. We like to put Louisiana Hot Sauce on it before diving in. You can also serve it over rice or with tortilla chips for those who just have to eat something else with it. (*cough*myson*cough*)
2. Honey Mustard Chicken, Avocado, and Bacon Salad - Bacon, Avocado... Need I say more? There is just something about the marriage of bacon and avocado flavors over a spring mix salad that never gets old. I have been on a huge bacon and avocado kick for the past month.
3. Okay, so I'm not even going to lie... Turkey burgers are on the menu (again) this week along with the Alexia Sweet Potato Puffs. It's just too easy when your week is crazy. I better start packing my bags...
4. One Pan Balsamic Chicken and Veggies - I like this particular recipe because it is easy and healthy. I actually throw everything in the crock pot to cook at the same time so I can be done. But you can also cook it in a skillet! The balsamic vinegar adds a very unique taste to this dish. We like to serve it with rice, but you can eat it without.
