Easy Crock Pot Fajitas
July 05, 2018After a night of dealing with a fussy, teething toddler and then working early in the morning at church, the last thing I wanted to do was cook supper. I had already managed to cook lunch, but I threw in the towel after the ginormous mess I had to clean up because of said toddler who is going through a food slinging stage! The crock-pot is my biggest go-to kitchen tool for these types of days! I decided to throw a few chicken breasts in the crock-pot, slice up some bell peppers and an onion, throw in some seasonings - BOOM - Dinner is served! Yep, it's that easy.
And look how pretty it is...
You can either serve it on wheat tortillas or you can serve it on a leaf of romaine or green leaf lettuce. With all the recalls on romaine lettuce, I chose green leaf!
Ingredients:
1-2 lbs chicken breasts
1 green bell pepper (sliced)
1 red bell pepper (sliced)
1 onion (sliced)
1/4 cup water
1 package fajita seasoning mix*
*Make your own:
1 tbsp cornstarch
2 tsp chili powder
1 tsp salt
1 tsp paprika
1 teaspoon white sugar
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp cayenne pepper
1/2 tsp ground cumin
Place chicken breasts in crock-pot. Cover chicken breasts with sliced bell peppers and onions. Cover with fajita seasoning and 1/4 cup water. Cook for 8 hours on low or 4 hours on high for an easy and delicious lunch or dinner! Serve on wheat tortillas or lettuce bowl. This recipe is great for easy meal prep!
