Easy Peasy Crock Pot Roast

Have you ever had the kind of day where you just want to come home and do nothing only to realize you still haven’t cooked supper yet? Yep, that would be me. Probably almost daily! This recipe has become one of my favorite go-to meals when I know I’m going to be too busy to cook or just don’t want to cook. Not only is it easy, it is also clean and healthy! I’m all for cooking something that is easy, clean, AND healthy!

All you need are the following ingredients:

2 lb chuck roast
5 red potatoes (more if desired) - cut into fourths
1/2 white onion sliced
1.5 cups of baby carrots (raw preferred, but canned will work as well
1/4 cup water

Generously season the roast with your seasoning of choice. Plain salt and pepper will work fine, but you can customize this to your taste. Sear the outside of the roast in a cast iron skillet if desired (honestly, I just pop it into the crock pot as is). Place your roast in the crock pot, place your veggies on top, and pour the 1/4 cup of water on top of roast and veggies. This combined with the juices from the roast and veggies will make a nice gravy if you are serving with rice.

Turn the crock pot on the lowest setting for 8 hours. Dinner will be done when you get home from work! You can eat this as is, or you can serve over rice and with another side of vegetables which is my personal favorite! Enjoy!
